Karnabahar Yemeği - Cauliflower Stew

If you're looking for healthy cauliflower recipes, this Turkish cauliflower stew is delicious as a main meal or an accompaniment to other dishes.
  • 1 medium-sized cauliflower (about 500g) broken into florets
  • 2 carrots, peeled and sliced
  • 1 onion, peeled and sliced into half moons
  • 1 dessert spoon salça (tomato paste)
  • 1 dessert spoon olive oil
  • 1 dessert spoon chilli flakes or paprika
  • Handful chopped flat leaf parsley
  • Salt and pepper to season
  1. In a deep pan, gently heat your olive oil.
  2. Once hot, add your onion and saute until it starts to sweat.
  3. Now add your carrots and stir them round.
  4. Keep the pan on a low heat and gently saute for 5 minutes or so until your carrot begins to cook and soften.
  5. You can add your chilli flakes, salt and pepper at this point, too.
  6. Meanwhile, put your salça into a cup and add boiling water or vegetable stock. Stir until the salça dissolves.
  7. Add your cauliflower to the pan along with the dissolved salça.
  8. Now add enough hot water or stock to cover the cauliflower florets.
  9. Stir everything around, bring to the boil and then simmer until your cauliflower is soft.
  10. Serve in a bowl and top with your freshly chopped parsley.
